Dr. Update

Life has been super crazy, so I am sorry. We have been eating alot of burgers, hot dogs and BBQ. All basic and contains nothing...YIPPEE.

In other more interesting news, Korde went back to the Dr. earlier this week and was given permission to try cookies and cakes, as long as they are sans milk chocolate and milk containing frosting. The longer things are cooked the less allergen remains. As stoaked as we are, we have yet to actually try due to chaos in the form of the midnight showing of Harry Potter that was MuCh more exciting then a cookie :)

French Toast

From The Everything Food allergy Cookbook by Linda Larsen we used the Cinnamon French Toast recipe, but (altered) it a bit.

1/4 c. OJ
1/4 c. rice milk (vanilla flavored)
1 ripe banana (1/2 cup applesauce)
2 TB sugar
1/2 tsp cinnamon(used cinnamon applesauce so didn't add this)
1/8 tsp cardamom(didn't use)
1 tsp vanilla
1/4 tsp salt

It said to use crusty bread, I didn't...USE CRUSTY BREAD This is a bit more liquidy then regular French Toast, so using the denser bread is a must. We didn't but have any and we didn't and it took lots of greaser to get them to not stick. However, these were SO GOOD! The OJ we used was a bit tart for me, but it was super tasty, smelled like Heaven and ALL the kids LOVED them...even my 2 picky eater brothers :) By the time I ate I wasn't hungry but the little I had while cooking was pretty darn tasty. Also, they didn't really need butter or syrup for some of the kids, which as long as they are happy everything else is much easier :)

Okay, so we had a whirlwind week last week, so I didn't get the stuff we tried on here.

We had a Polynesian Stir-Fry that was REALLY good, but the recipe is at my house and I am not.

We also had a Roasted Garlic sauce with Roasted veggies. The veggies were good, Korde liked the sauce and I didn't, I didn't give it to the baby, and no one else was home.

We have taken her out to eat, hamburgers are something easy she can eat out.

Instant Mashed potatoes are hit and miss. We have some that are fine, just have to switch out the regular milk with an alternative, but at my parents house, theirs have milk in the "mix".

First attempt at "Alfredo"

This was the recipe we had. It's from The Candle Cafe Cookbook by Joy Pierson and Bart Potenza with Barbara Scott-Goodman

1 lb Silken Tofu
1 Head of Garlic, peeled
1/4 sup Sesame Tahini
1/4 cup Shoyu or Tamari Soy Sauce
pinch of salt
1 cup water

Blend all ingredients together until smooth. Transfer to a sauce pan and cook for 1 hour over med-low heat stirring occasionally.


This tasted like liquid garlic. It was not tasty to us at all. I had to thin it down with soy milk because it was REALLY thick. I don't know if I will try to alter it or just try a different one.
